I’m always saving for my next trip, but something I still really enjoy is food. I’ve been cooking at home more than ever lately in an effort to bulk up my savings. But that doesn’t mean we have to eat boring food. Since cooking more at home, we’ve really increased our cooking skills. Michael and I cook a lot of Indian and Mexican food. I thought it may be fun to share some of our favorite recipes! This is cheap vegan food that is quick, easy and delicious.
Cheap Vegan Food
One thing we eat at least once a week is tacos. I am a huge fan of Mexican food, as I grew up in California. I am practically made of tacos and burritos! These are mexican style, easy vegan tacos. They’ll satisfy any picky eater, and even meat eaters.
The ingredients for these mouth watering tacos are:
- 1-2 blocks firm tofu (we usually use 2)
- Half to 1 full packet taco seasoning (depending on qty of tofu)
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- Corn tortillas
- Cilantro (or Coriander for you Aussies)
- Fresh tomatoes
- Hot sauce of your choice (I like sriracha and Cholula)
- Salad greens
- 1 avocado
Start off by opening the tofu and pressing as much water out of it as you can. Next, crumble the tofu into a bowl by squishing it in between your hands. This is the fun part! When it’s the same consistency as a ground beef, add in the taco seasoning (use only half a packet if you are using 1 block of tofu). Then, cook the tofu in a non-stick frying pan for about 20 minutes on medium, letting it brown on each side before flipping.
While the tofu is cooking, arrange your corn and beans. Chop the cilantro and tomatoes. Get your dishes out and do a little dance. About 15 minutes in, turn on another frying pan to medium heat and start cooking your tortillas. I don’t add any oil to them, I just cook them in the pan. This way is much healthier.
When the tofu is finished cooking, arrange your tacos and dig in! The combination of taco seasoning, hot sauce, creamy avocado, fresh cilantro and crisp salad greens is so satisfying. My favorite part of this recipe is that it’s so healthy.
This is such a simple and easy recipe. It’s perfect for weeknight dinners. But don’t expect leftovers! No matter how much we make, we never have leftovers from this recipe. It’s just too good.
