Blueberry Vanilla Pancakes

I spent some time cooking at my place in Melbourne a bit to save up money for my next round of traveling. Though I usually keep it pretty simple, sometimes I like to create something a bit more special. This weekend, I treated myself with {healthy} vegan blueberry vanilla pancakes.

Vegan Blueberry Banana Pancakes

These babies were super easy to whip up! They took me less than 5 minutes and I already had all of the ingredients on hand. They are super healthy but taste amazingly decadent.


To make these pancakes, you’ll need: 

  • 1 cup oats (measure, then blend into a flour)
  • 1 whole, very ripe banana (brown spots preferred)
  • 1/3 to 1/2 cup soymilk – depending on how thick or thin you like your pancakes
  • 1 tsp baking powder
  • 1 tbsp cinnamon (optional)
  • 1 tsp vanilla powder
  • 1 cup frozen blueberries, heated in the microwave
  • maple syrup
  • optional toppings: coconut flakes, chia seeds, banana slices

Once you’ve blended your oats into a flour, add the banana, soy milk, baking powder, and optional cinnamon and vanilla. Blend until it is batter consistency – but don’t over blend.

Blueberry Vanilla Pancakes

Pour your batter onto a hot pan, using coconut oil to prevent sticking. Wait until bubbles rise on top to flip your pancakes.

Once your pancakes are perfectly cooked, layer your warm blueberries in between the stacks. Top with coconut flakes and maple syrup, and enjoy your decadently healthy breakfast!
